Ingredients:

• 5 Pasture-Raised Organic Love Your Eggs
• 19oz Tater Tots
• 1Cup Ham
• 1Cup Sausage
• 6 Bacon Slices *crispy
• 12oz Cheese *Mild or Colby
• 1C Milk
• 1/2 Green Pepper
• 1/2 Red Pepper
• Salt & Pepper to taste
• Green diced small

Directions:

1. Preheat & Prep

1. preheat oven at 350°
2. In a large skillet cook breakfast sausage and ham until there is no pink on the sausage then aside.
3. Crack eggs and whisk with with the milk
4. In an oven safe pot tater tots. Spread the tater tots evenly in the bottom of the greased pan. Bake for 15 minutes spread then remove from oven then add cheese on top.
5. Once potatoes and cheese are layered. Add the meat mixture. Add egg and milk mixture to the top of the casserole. Bake for 40 minutes. While casserole is baking cook bacon until it’s crispy.
6. Serve with crumbled bacon and green onions on top.
