Thanksgiving Sweet Potato Casserole

Ingredients:
For the Casserole
- 5–6 medium sweet potatoes
- ¾ cup white sugar
- ¼ cup dark brown sugar
- 1 stick (½ cup) butter
- 2 large Organic Pasture-Raise Love Your Eggs eggs
- 1 teaspoon vanilla extract
- Cinnamon to taste
- Dash of pumpkin spice
- 1/2 cup milk
For the Topping:
- 1 cup dark brown sugar
- ½ cup all-purpose flour
- ½ stick (¼ cup) softened butter
- Mini marshmallows
Directions:
1. Preheat & Prep
- Prep the sweet potatoes: Peel, cut, boil until tender, then mash.
- Mix the base: Combine mashed sweet potatoes with white sugar, brown sugar, butter, eggs, vanilla, cinnamon, pumpkin spice, and milk until smooth.
- Prepare topping: Mix dark brown sugar, flour, and softened butter until crumbly.
- Assemble: Spread sweet potato mixture into a baking dish. Sprinkle the crumb topping evenly over it.
- Bake: Bake at 350°F (175°C) for 20 minutes.
- Add marshmallows: Remove from oven, top with mini marshmallows, and bake for 10 more minutes until marshmallows are golden.
- Cool & serve: Let cool slightly before serving.
