Loaded Potato Scotch Egg

This hearty twist on the classic Scotch egg swaps sausage for creamy, cheesy loaded mashed potatoes. Crisp panko coating, smoky bacon, and a tangy mustard sauce make it an irresistible appetizer or brunch centerpiece.

Ingredients:

9 large hard-boiled eggs

4 cups mashed potatoes

10 slices bacon, cooked crispy and chopped

1½ cups shredded cheddar cheese

ÂĽ cup chopped green onion

Salt and pepper, to taste

1 cup flour
-
2 cups panko bread crumbs
-
½ cup whole grain mustard
-
2 tbsp crème fraîche
-
1 tsp apple cider vinegar
Directions:
- Preheat a fryer to 350°F (175°C).
- In a large bowl, combine the mashed potatoes, bacon, cheddar cheese, green onion, salt, and pepper.
- Scoop a portion of the potato mixture into the palm of your hand, shaping it into a small bowl. Place a hard-boiled egg in the center and gently wrap the potato mixture around it, sealing tightly. Repeat with remaining eggs. Chill to firm up.
- Set up three shallow dishes: one with flour, one with whisked eggs, and one with panko bread crumbs. Coat each wrapped egg first in flour, then in the egg wash, and finally in panko.
- Fry two eggs at a time for about 2 minutes, or until golden brown. Transfer to a paper towel–lined plate to drain.
- In a small bowl, whisk together the mustard, crème fraîche, and apple cider vinegar. Season with salt and pepper.
- Serve the Scotch eggs warm, with a dollop of mustard sauce on the plate and the fried eggs placed on top.
