Fall Sweet Potato Poke Cake

This delicious sweet potato poke cake starts with a box cake mix, and then you completely transform an ordinary cake into a holiday family recipe that will be requested for years

Ingredients:
1 box Yellow Cake Mix
4 Love Your Eggs
1 1/2C Sweet Potatoes
1/2Tsp Vanilla Bean Paste
1/3C Vegetable Oil
1Tbs Pumpkin Pie Spice
14oz Condensed Milk
2Tbs Milk
7oz Marshmallow Fluff
4oz Cream Cheese * softened
Caramel* optional
Fall Candies * optional
Crushed walnuts *optional
Directions:
Pre-heat oven 350°
In a baking dish, bake 3 medium sweet potatoes until fork tender. Once cooled, remove the skin. You should have about 1 1/2 -2C of mashed sweet potatoes.
In a large bowl add cake mix, eggs, oil, 1 1/2C sweet potatoes, vanilla bean paste, and pumpkin pie spice. Mix completely Add batter to greased 13×9 baking dish.
Bake for 25–30 minutes until a cake tester or toothpick comes out clean in the middle of the cake. Take the round handle of a spatula or a fork to poke the holes in the cake.
In a bowl add the condensed milk, milk and a pinch of pumpkin pie spice mix completely. Pour over holes in cake. Cover and refrigerate for at least 2hrs.
When ready to serve, remove the cake.
In the same bowl add cream cheese and marshmallow fluff. Whip with a wire whisk or spatula to combine. (mixture will be lumpy and airy because of the marshmallow fluff) Spread over top of cake evenly.
If desired, decorate the cake with caramel lines and holiday fall candies.
