Sweet Potato Hash Recipe

This sweet potato hash is loaded with vitamin C, zinc, and antioxidants to help keep your energy (and immune system!) strong through busy weeks.

Ingredients:

2 tbsp olive oil or avocado oil

2 bell peppers, diced (any color)

2 shallots, roughly diced
-
2 medium sweet potatoes, peeled and diced small (about 3 cups)

1 head of spinach, roughly chopped
-
½ tsp smoked paprika
-
ÂĽ tsp cumin
-
â…› tsp cayenne pepper
-
3 large Love Your Eggs Outdoor Cage Free eggs

Salt and pepper, to taste
Directions:

Heat oil in a large cast-iron skillet over medium heat. Sauté the bell peppers and shallots for 1 minute.

Add diced sweet potatoes, seasonings, and stir, cooking for 5-10 minutes. Cover the pan during the last few minutes to help soften the sweet potatoes. Note: Stir every few minutes to keep the bottom from burning.

Gently stir in the chopped spinach, then make three light wells (leaving a light layer of sweet potato mixture at the bottom), evenly spaced apart, and crack a Love Your Eggs egg into each well.

Cover the pan and cook for an additional 3-4 minutes or until the yolks and whites have set.

Divide the sweet potato hash and over-easy eggs onto plates. Top with any optional garnishes like sliced green onions, arugula, hot honey, or avocado.
